Victoria Sponge Cake 维多利亞海綿夾層蛋糕

This Victoria Sponge sandwich is super easy and very delicious! Enjoy it for afternoon tea and you will feel just like Queen Victoria. Strawberries and cream go together perfectly with the light sponge.

What you will need

For the sponge cake:

  • 225g plain flour
  • 1 heaped tbsp baking powder
  • 225g butter (room temperature)
  • 225g sugar
  • 4 large eggs

For the filling and topping:

  • 100ml whipping cream
  • 4-6 tbsp jam
  • 6 strawberries
  • Icing sugar, for sprinkling

Let’s get cooking!

  1. Preheat the oven to 180C/ 160C fan/ 350F.
  2. In a mixing bowl, thoroughly combine the baking powder and flour.
  3. Add the remaining sponge cake ingredients into the flour mixture.
  4. Mix the ingredients for 2-3 minutes using an electric whisk on high speed until fully combined.
  5. Line the bottom if two 18cm / 7″ cake tins with parchment paper. Evenly distribute the batter between the two tins and smooth the top flat.
  6. Bake in the oven for 40-45 minutes. To test for doneness insert a toothpick into the cake, it should come out clean. Place on a cooling rack until fully cooled.
  7. Using a clean, grease-free bowl and electric whisk, whip up the cream to stiff peaks.
  8. Once the cakes are cooled flip them over so the flat surface is on top. Spread the strawberry jam onto one of the sponge cakes.
  9. Fit a piping bag with a large star tip. Pipe a layer of cream onto the strawberry jam, reserving some cream for the top of the cake.
  10. Place the second sponge cake on top of the jam and cream filling.
  11. Sprinkle the top of the cake with icing sugar. Pipe 6 swirls of cream around the top of the cake. Place the strawberries onto each swirl of cream, with the tip of the strawberry pointing towards the centre.
  12. Set your table with your finest silverware to indulge in this cake for afternoon tea!
