Mother’s Day Cupcake Flower Basket 母親節紙杯蛋糕花籃

What you will need

For the chocolate cupcakes:

  • 200g | 1 cup sugar
  • 80g | 3/4 cup cocoa powder
  • 200g | 1 3/4 cups plain flour
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1 large egg (room temp.)
  • 120ml | 1 cup whole milk (room temp.)
  • 60ml | 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 120ml | 1/2 cup boiling water

For the buttercream:

  • 240g | 2 sticks butter, softened
  • 440g |2 1/4 cups icing sugar
  • 1-2 tbsp milk
  • ¼ tsp vanilla extract
  • Food colouring gel paste of your choice

Let’s get baking!

Bake the chocolate cupcakes

  1. Preheat the oven to 180C/ 160C fan/ 350F, position a rack in the centre of the oven.
  2. Place a cupcake liner into each hole of a cupcake pan.
  3. Staple 6 paper cups together in a circular arrangement. Trim the cups to the depth of your basket.
  4. In a mixing bowl, thoroughly mix the dry ingredients; sugar, cocoa powder, plain flour, baking powder and baking soda.
  5. Add the wet ingredients to the mixing bowl (except for the boiling water); egg, milk, vegetable oil and vanilla extract. Beat on medium speed for 2-3 minutes with an electric whisk.
  6. Use a spatula to stir in the boiling water.
  7. Pour the batter into a jug for easy distribution. Fill each cupcake liner 3/4 full with batter.
  8. Bake for 22-25 minutes until a toothpick inserted comes out clean. Cool completely before icing.

Decorate with icing flowers

  1. Use an electric whisk to beat the butter in a large bowl for 8 minutes until soft and lighter in colour. This will incorporate air to produce a light buttercream.
  2. Sift in half of the icing sugar and beat until smooth. Add the remaining icing sugar, vanilla and 1 tablespoon of milk. Whip on high speed for another 3-4 minutes until very light, creamy, and fluffy. If the buttercream is too stiff whip in the second tablespoon of milk.
  3. Split the buttercream into 4 bowls. Add leaf green food colouring gel paste to one bowl and your chosen 3 colours to the other bowls. Stir each bowl until well mixed.
  4. Prepare 4 icing bags with a leaf tip, a large closed star tip and 2 flower tips. Fill with buttercream.
