Christmas Cookies

These cookies smell soooo good and are full of Christmas flavours, cinnamon, nutmeg, cranberries… The dough doesn’t need refrigerating and can be rolled and baked right away which makes them fast and convenient too. Can’t wait for Christmas!

This recipe is suitable for children of all ages because everyone loves Christmas and cookies, so it’s a win win!

What you will need

  • 500g frozen berries, defrosted
  • 150g strawberry jam
  • 300g pound cake, cubed
  • 500ml custard
  • 250g mascarpone cheese
  • 3 tbsp caster sugar
  • 400ml whipping cream

Optional extras:

  • Egg wash (equal parts egg and water)
  • Festive sprinkles

Let’s get baking!

  1. Preheat the oven to 180C / 160C Fan / 350F
  2. Line two baking sheets with baking paper
  3. Cream the butter and sugar together with an electric whisk for 2 minutes
  4. Incorporate the egg, vanilla, cinnamon and nutmeg into the batter
  5. Use a spoon to stir in the flour
  6. Briefly mix in the cranberries until just combined
  7. Roll the dough into 18 balls and space them out onto the two baking trays
  8. Flatten each ball slightly with a spatula
  9. Bake for 15 minutes. If you are decorating with sprinkles remove from the oven after 10 minutes

To Decorate

  1. Brush the top of each cookie with egg wash, distribute the sprinkles
  2. Return to the oven for 3 minutes
  3. Leave to cool on a cooling rack
