Candy Floss Strawberry Cupcakes

Candy floss reminds me of amusement parks and fun! If you don’t have a candy floss machine the strawberry cupcakes are delicious on their own too, the yoghurt keeps them moist and the fresh strawberry pieces juicy.

What you will need

  • 175g self raising flour
  • 100g caster sugar
  • 2 eggs
  • 100g Greek yoghurt
  • 115g melted butter at room temperature
  • 100g strawberries, finely chopped

Optional extras:

  • 1 tbsp candy floss sugar with a candy floss machine
  • Sprinkles for decoration

Let’s get cooking!

Combine the ingredients

  1. Preheat the oven to 180C/ 160C fan/ 360F
  2. Line a 12 hole muffin tin with cupcake cases
  3. In a mixing bowl combine the flour and sugar
  4. In a measuring jug mix together the eggs, yoghurt and melted butter
  5. Pour the wet ingredients into the mixing bowl with the dry ingredients, mix well until you have a smooth batter
  6. Fold in the chopped strawberries
  7. Evenly distribute the batter between the 12 cases, they should be three quarters full
  8. Bake in the oven for 25-30 minutes, until a skewer inserted comes out clean
  9. Cool the cupcakes on a wire rack before decorating

Decorate Your Cupcakes

  1. Make 12 small balls of candy floss as per the instructions of your candy floss machine
  2. Mould each candy floss ball into a flat disc and place on top of the cupcakes
  3. Decorate the top of your candy floss with sprinkles
